Homemade salsa is popular year-round, but it really shines in the summer because of all the fresh produce. This dill pickle salsa is perfect for every summer celebration from Memorial Day through the Fourth of July!

I’ve always been a huge fan of dill pickles! Even a child, my extended family would tease me about my love of pickles at family gatherings.
Several months ago, while planning recipes for the summer, I decided to make salsa with dill pickles instead of cucumbers. Then, a couple of weeks ago, my daughters came home with a container of pickle de gallo from the grocery store and told me to try it. I didn’t even know it was a thing, and it solidified my decision to try making my own version!
I tested the recipe with and without Roma tomatoes, and prefer the version with tomatoes. But this is the kind of recipe where you can easily swap ingredients or add more of what you like the most to make it the way you want.

How To Make Dill Pickle Salsa

Ingredients
Put diced dill pickles (use your favorite brand), diced yellow onions, diced Roma tomatoes, diced green bell peppers, chopped cilantro, minced jalapenos, minced garlic, and dill pickle juice.


Mix and Chill
Stir the ingredients until they are combined and everything is coated with the pickle juice. Then, cover the bowl and refrigerate the dill pickle salsa for at least an hour before serving, to allow the flavors to combine.


Recipe Tips
- Make Ahead: This recipe is one you can make ahead of time to bring to a backyard barbecue or to check off your list when entertaining. It tastes even better after being in the fridge overnight!
- Refrigerator: Store in an airtight container in the fridge for 3-4 days.
- Options: If you want this pickle de gallo to be more colorful, use orange or yellow peppers instead of green. For a spicier salsa, add more minced jalapenos.
- Serving: I typically eat this salsa with chips, but also love it on burgers and tacos!
