    Ham Biscuits

    Make warm, flaky ham biscuits with cheese for a weekend breakfast or holiday brunch. It’s the perfect way to use leftover ham!

    Ham and cheese biscuits are one of the most popular breakfast sandwiches! They are easy to make, and we love the combination of flavors and textures.

    Tonia’s Notes

    We make a slow cooker ham for every holiday dinner and hope that we have leftovers so that we can use them for additional meals like these ham biscuits! If we don’t have leftover ham, we pick up a small ham from the grocery store and slice it before warming it up.

    I like making a sweet and tangy sauce to bring additional flavor to the sliced ham. The combination of the tender, flaky biscuit with the warm ham and melted cheese on top is irresistible.

    How To Make Ham Biscuits

    Biscuit Dough

    Combine the flour, baking powder, sugar, salt, and baking soda. Cut in the shortening and butter until the mixture is crumbly. Make a well in the center and pour in the buttermilk. Stir until the dry ingredients are moistened and a rough dough forms.

    Knead and Fold Dough

    Turn the dough onto a well-floured surface. Sprinkle the top with flour and gently knead a couple of times. Then, gently pat into a rectangle, fold the dough in half, and then in half the other direction, and pat into a rectangle. Repeat the folding process two more times, adding more flour to the surface as needed, ending up with a rectangle about 1/2 inch thick.

    Cut Biscuits

    Use a 2 1/2-inch biscuit cutter to cut circles in the dough. Press the biscuit cutter straight down without twisting until you cut all the way through. Gently refold the scraps and cut additional biscuits. Place the biscuits on a parchment-covered baking sheet. Bake the biscuits at 425˚F for 12-15 minutes, until golden on top. Remove from the oven and brush the tops with melted butter.

    Optional Sliced Ham Sauce

    While the biscuits are baking, you can make a flavorful sauce for the sliced ham. Combine the orange juice, honey, brown sugar, ground mustard, chili powder, and ground cloves in a large pot. Bring the sauce to a simmer. Add the sliced ham and stir to coat with the sauce. Warm the ham in the sauce for 5-8 minutes over low heat, turning occasionally.

    Warm In The Oven

    You can serve the biscuits and warm ham separately, or make the ham biscuits and melt the cheese in the oven. Place the sliced biscuits on a baking sheet, top them with ham and sliced cheddar or Swiss cheese. Loosely cover with foil and warm in the oven at 350˚F for 5-7 minutes, or until the cheese is melted.

    Recipe Tips

    • Make Ahead: You can make the biscuits and slice the ham the night before. Store the biscuits in an airtight container at room temperature, and store the ham in the fridge.
    • Refrigerator: Store leftover ham biscuits in an airtight container in the fridge for 2-3 days.
    • Freezer: You can also wrap them tightly with plastic wrap and store them in a freezer-safe storage bag or container for up to a month.
    • Reheat: Reheat ham biscuits in the oven loosely covered with foil or in the microwave wrapped in a paper towel.

    Ingredients

    Biscuits

    • 3 cups all-purpose flour
    • 1 ½ tablespoons baking powder

    • ½ cup shortening
    • ¼ cup cold butter cubed
    • 1 ⅓ cups whole buttermilk
    • 2 tablespoons butter melted
    • 2 pounds sliced ham
    • 8 ounces sliced sharp cheddar cheese or Swiss cheese

    Sliced Ham Sauce

    • 1 cup orange juice
    • ½ cup honey
    • ½ cup brown sugar
    • 1 teaspoon ground mustard
    • ½ teaspoon chili powder
    • ⅛ teaspoon ground cloves

    Instructions
