This Ice Cream Filled Chocolate Chip Cookie Bites recipe is bite sized dessert! Wrap chocolate chip cookies around a scoop of ice cream and dip it in chocolate.
Some summer days just call for a special treat like these ice cream filled chocolate chip cookie bites! Even though it is called summer vacation, it isn’t always a picnic.
Yesterday morning my friend text me to see if we wanted to meet them at the lake. Since summer has returned for one last hurrah and the temperature was going to hit 90 degrees with high humidity, we said sure! And that is where the problems began. My kid’s goggles were broken, we didn’t have enough bread to make sandwiches for all of us for a picnic lunch, I lost my swimsuit bottoms and so on. We finally got out the door and by this time I had a headache. Although it could’ve been from the crazy morning, I was pretty sure that the headache was caused from my contact being on the opposite eyes. That meant we had to stop by Target to pick up lunch, swimsuit bottoms and contact solution.
Once we were on our way to the lake, I remembered that the main road we needed to take was under construction and we had to take a detour. Eventually we arrived at the lake, my kids jumped out and went to look for our friends. They couldn’t find them so we called and they said they were sitting by the concession stand. We still couldn’t find them so we called again and suddenly it dawned on me that we might be at different lakes. Remember, we live in Minnesota the “Land of 10,000 Lakes”. So, I asked which lake they were at and sure enough I has misread the text message and went to the wrong lake. By that time, it was too late to do anything about it so we stayed put. Our friends spent their day at Lake Minnewashta Regional Park while we spent ours at Lake Minnetonka Regional Park!
To make these Ice Cream Filled Chocolate Chip Cookie Bites, start by making scoops of ice cream and putting them in the freezer to harden. Depending on the freezer, they will need at least 1 hour to harden.
While the ice cream scoops are in the freezer, make a batch of chocolate chip cookies. I saved myself some time by using Pillsbury refrigerated chocolate chip cookie dough. Allow the cookies to cool and then flatten with a rolling pin. Put one of the ice cream scoops in the center of the flattened cookie. Mine started to melt while I was busy trying to take pictures of it.
Working quickly, wrap the cookie around the ice cream scoop and press it into a ball.
Put the ice cream filled chocolate chip cookie balls back in the freezer to harden for 1-2 hours.
Remove the ice cream filled chocolate chip cookie balls from the freezer and quickly dip them in melted chocolate. I used chocolate Candiquik.
Return them to the freezer to harden and leave them there until ready to serve.

Ice Cream Filled Chocolate Chip Cookie Bites
Ingredients
- 12 Ice Cream Scoops I used vanilla.
- 12 Fresh Chocolate Chip Cookies I used refrigerated dough.
- Chocolate Candy Coating such as CandiQuik
Instructions
- Freeze scoop of ice cream until hardened.
- Flatten chocolate chip cookies with a rolling pin.
- Place a scoop of hardened ice cream on the chocolate chip cookie.
- Wrap the cookie around the ice cream scoop.
- Place in freezer until hardened.
- Melt candy coating in microwave.
- Coat cookie balls with melted chocolate.
