These no bake S’more Ooey Gooey Bars have a graham cracker and nutella crust, s’mores rice krispies on the top and marshmallow cream in the middle!
Today is National S’mores Day and although I don’t always get the memo about what the national day is, I did hear about this one and had to make a dessert.
Over the past year and a half, I’ve shared six recipes for ooey gooey bars starting with the Funfetti Ooey Gooey Bars, which were featured in Woman’s World magazine this past spring, and ending with Chocolate Ooey Gooey Bars from last April.
It finally dawned on me that I hadn’t made S’more Ooey Gooey Bars which would seem like a no brainer since s’mores are ooey gooey! So, today I’m sharing these no bake S’more Ooey Gooey Bars in celebration of National S’mores Day.

S’more Ooey Gooey Bars Recipe
Step One: make the crust
Mix together graham cracker crumbs, powdered sugar, melted butter, and nutella to make a thick dough.
Press the dough into the bottom of an 8×8 pan that is lined with foil and greased.
Step Two: make the middle layer
Spoon the marshmallow cream on top of the bottom layer.
Grease a spatula (I used my favorite mini spatula from this set) with cooking spray and gently spread the marshmallow cream out.
It will continue to spread out on its own as it sits on the counter while making the top layer.
Step Three: make the top layer
For the top layer, I made my S’mores Rice Krispies Recipe follow that link to find more pictures of how to make them.
First, toast a cup of mini marshmallows under the broiler (or use a kitchen torch for a true “no bake” recipe) on a baking sheet covered with parchment paper. Remove from oven and set aside.
Melt butter in the microwave in a large bowl. Add three cups of mini marshmallows and stir to coat. Return to the microwave for 45 seconds. Stir until smooth.
Add the Rice Krispies and stir to coat. Stir in the toasted mini marshmallows, chocolate chunks, and mini Teddy Grams.
Use a greased spatula (I used my favorite silicone spatula aka a spoonula) to spread the s’mores rice krispies over the marshmallow cream and gently press it into the marshmallow cream.
Cover the pan and place in the fridge until ready to serve.
Cut into slices and watch the marshmallow cream slowly start to ooze out to the center. These Ooey Gooey S’mores Bars are the perfect way to celebrate National S’mores Day!
S’more Ooey Gooey Bars Tips and FAQ
1. I used Mini Teddy Grahams in this recipe because they are less crumbly with regular graham crackers and they don’t get soggy right away, but you can use chopped graham crackers if you prefer.

These no bake S’more Ooey Gooey Bars have a graham cracker and nutella crust, s’mores rice krispies on the top and marshmallow cream in the middle!
Ingredients
Base Layer:
- 1 cup graham cracker crumbs
- 1 cup powdered sugar
- 1/2 cup butter, melted
- 6.5 oz Nutella, (1/2 cup + 2 tablespoon or half of a 13 oz container)
Middle Layer:
S'mores Rice Krispies Bars:
- 1 cup toasted mini marshmallows
- 1 cup chopped Hershey's Milk Chocolate Bars
- 2 tablespoon butter
- 3 cups mini marshmallows
- 3 cups Rice Kripsies
- 1 cup roughly chopped graham crackers, (or use mini Teddy Grahams)
Instructions

- Chop the Hershey's bars into small pieces and set aside.
- Melt butter in the microwave in a large bowl. Add three cups of mini marshmallows and stir to coat. Return to the microwave for 45 seconds. Stir until smooth. Add the Rice Krispies and stir to coat.
- Stir in the toasted mini marshmallows, chocolate chunks, and chopped graham crackers or mini teddy grahams. Used a greased spatula to spread the s’more rice krispies over the marshmallow cream and gently press it into the marshmallow cream.
- Cover the pan and place in the fridge until ready to serve.
