This easy S’mores No Bake Cookies Recipe is perfect for when you don’t feel like turning the oven on.
It has been such a busy week! My kids start school next Tuesday. We’ve been trying to get all of the last minute things done while keeping up with the everyday stuff. We found the rest of the kid’s school clothes and spent some time cooling off in the lake. It has been so hot this week! When I see things like “excessive heat warning” in the forecast, I tend to leave the oven off. It is the perfect time to make no bake cookies! My mom never really made no bake cookies. She made more cinnamon rolls and chocolate chip cookies. But my mother-in-law makes no bake cookies and so does one of my best friends. My mother-in-law usually makes the chocolate no bake cookies while my friend typically makes peanut butter no bakes…and I love them all! I decided to go with combine the traditional no bake cookies with a classic summer treat by making S’mores No Bake Cookies!
Instead of peanut butter, I used Nutella to give the no bake cookies a chocolate flavor. I added graham crackers in the form of Golden Grahams cereal. The marshmallows are Jet-Puffed Mallow Bits and the chocolate are mini chocolate chips! Ever since I scooped these cookies onto the waxed paper, my kids have been begging me to get the pictures taken so that they can eat the cookies.
- Mix together sugar and milk.
- Bring to a rolling boil over medium heat.
- Add marshmallows and stir until dissolved.
- Stir in Nutella until combined.
- Remove from heat and stir in vanilla.
- Add oatmeal and stir until coated.
- Mix in Golden Grahams, mini marshmallows bits and mini chocolate chips.
- Drop by tablespoonfuls onto waxed paper.
