Mint M&M’s Chocolate Cookie Bars for St. Patrick’s Day

Mint M&M’s Chocolate Cookie Bars for St. Patrick’s Day are what comes after the White Chocolate M&M’s Valentine’s Day Cookie Bars! I couldn’t let the cookie bar fun end after one holiday. This easy recipe includes a chocolate cake mix and dark chocolate mint M&M’s!


While we don’t really get into St. Patrick’s Day, we sure do love chocolate and mint! We even had some chocolate and mint bars at our wedding. When I saw a bag of dark chocolate mint M&M’s at our local grocery store, I knew they needed to be used in a cookie bar. These bars are soft, moist, chewy and crunchy. The combination is delightful!

Start by mixing together a chocolate cake mix, a stick of softened butter and an egg.

It becomes a very thick batter.

Press the batter into a foil lined, greased 9×13″ pan.

Top with one cup of milk chocolate chips and one cup of white chocolate chips.

Sprinkle dark chocolate mint M&M’s over the top of the baking chips.

Drizzle sweetened condensed milk over everything.

Bake for 25-30 minutes at 350°F. The bars got really bubbly and a little strange looking so I wondered if they were going to taste good. But they smelled fantastic so I knew there was hope!

I allowed the bars to cool completely mostly, lifted the bars out of the pan using the foil and peeled away the foil.

I cut the bars into pieces and naturally we had to sample them. Many ohhh and ahhh’s followed and so did a second sample! I packaged some up to bring to my in-law’s house.

It’s a good thing that some of these bars were shared with relatives because they were irresistible. Try making a pan for St. Patrick’s Day, your wedding or to celebrate an everyday event like finding time to shower before noon.

Mint M&M’s Chocolate Cookie Bars

1 triple chocolate fudge cake mix
1 stick softened butter
1 egg
1 cup milk chocolate chips
8 oz bag dark chocolate mint M&M’s
14 oz sweetened condensed milk

Preheat oven to 350°F. Mix together cake mix, butter and egg. Pat into a foil lined, greased 9×13″ pan. Top with milk chocolate chips, white chocolate chips and mint M&M’s. Pour can of sweetened condensed milk evenly over the top. Bake for 25-30 minutes or until golden brown along the edges. Allow bars to cool completely before cutting.

    • Really? Wow! The two of you live so far away from each other. That must be hard! No, I am in the middle of the United States and I am not even Irish! But it is still fun to something to celebrate in the middle of winter so we wear green and each mint flavored desserts. :)

    • Hi Madeline! Sorry you can’t find them! I purchased the mint M&M’s at Target. They sell them everywhere here from the local grocery stores to the gas stations. You might have to purchase them online and have them shipped to you.
