Crispy Peanut Butter Bites are so much easier to make than peanut butter balls or truffles. Sandwich dough between pretzels and dip half in white chocolate!
Sometimes I don’t have time to sit and dip truffles or cake pops or cookies. Or maybe it is more that I don’t feel like making the time to dip them, especially when there are 60 treats to dip.
So, instead of making crispy peanut butter balls, I made these Crispy Peanut Butter Bites with the dough sandwiched between pretzels and only dipped one half. This saved me so much time since I could hold onto one side of the cookies while dipping the other side…no chocolate forks involved!
The dough in the middle is based on a recipe for peanut butter balls that a friend gave to me years ago. Mix together peanut butter, vanilla and marshmallow cream. Then, stir in Rice Krispies.
Put about one teaspoonful onto about 30 pretzel. You can roll the dough into balls first, if you want. I used checkerboard shaped pretzels called Snaps from Sndyer’s of Hanover but pretzel twists would work as well. Squish another pretzel on top and place them in the freezer for 15 minutes to harden.
Melt white chocolate chips and shortening in the microwave for one minute. Stir until smooth. (Microwave for an additional 15 seconds, if necessary.) Dip one half of the pretzel cookies into the white chocolate. Place them on parchment paper and add some sprinkles.
Allow the white chocolate to set and they are ready to eat!

- 1 cup crunchy peanut butter
- 7 oz container marshmallow cream
- 1/2 tsp vanilla extract
- 1 1/2 cup Rice Krispies
- 60 pretzels
- 1 cup white chocolate chips
- 3 tsp shortening
- Sprinkles
Instructions
- Mix together peanut butter, vanilla and marshmallow cream.
- Stir in Rice Krispies.
- Put about one teaspoonful (roll into a ball, of desired) onto about 30 pretzel.
- Squish another pretzel on top and place them in the freezer for 15 minutes to harden.
- Melt white chocolate chips and shortening in the microwave for one minute. Stir until smooth. (Microwave for an additional 15 seconds, if necessary.)
- Dip one half of the pretzel cookies into the white chocolate. Place them on parchment paper and add some sprinkles.
