    Slow Cooker Tacos

    This easy Slow Cooker Tacos recipe is a hands-off way to make dinner for your family! It’s the perfect crockpot recipe for busy weekdays.

    We took the classic tacos recipe from the back of the seasoning packet and made it even better by adding tomatoes, onions, and garlic! The meat absorbs the flavors while it slowly cooks in a crockpot.

    Tonia’s Notes

    Tacos are easy to make in a skillet, but ever since I first tried making crockpot tacos, it’s the only way I’ve made them!

    I love that dinner is ready when I get done with work, and we can sit down to eat before going about our evening activities.

    To make cleanup easier, I use a slow cooker liner, and to keep the smell out of our house, I put our crockpot in the garage while it is cooking!

    How To Make Slow Cooker Tacos

    Lean ground beef in crockpot.

    Put the lean ground beef in a slow cooker and break it up into pieces.

    Add chopped onions and diced tomatoes to meat.

    Top the meat with taco seasoning, a can of drained Rotel diced tomatoes with green chilies, diced onions, and minced garlic. If you want the flavor without the tomato pieces, puree the Rotel first.

    Stir until everything is combined and the seasonings are evenly distributed.

    Cover and cook on low for 5-6 hours or on high for 3-4 hours or until fully cooked. The meat will be cooked into one large piece, so you’ll need to chop it up into whatever size pieces you want.

    Storage Tips

    • Cooling: Transfer the taco meat from the crock pot to smaller, shallow containers and place them in the fridge to cool.
    • Refrigerator: Store the cooled taco meat in an airtight container in the fridge for 3-4 days.
    • Freezer: Or in a freezer-safe airtight container in the freezer for 1-2 months.

    Frequently Asked Questions

    How can I make plain slow cooker tacos?

    If you want to use only ground beef and taco seasoning, you’ll need to add 2/3 cup of water.

    Can I double this recipe?

    Yes, I’ve made a double batch many times! Depending on your slow cooker, you may need to increase the cooking time for extra ingredients.

    Can I use ground turkey to make tacos?

    Yes, you can ground turkey or ground chicken in place of lean ground beef.

    • 1 lb lean ground beef
    • 1 ounce taco seasoning
    • 10 ounce can Rotel diced tomatoes with green chilies, drained original or mild
    • ¼ cup diced onion
    • 2 cloves garlic, minced

    Instructions

    • Put the ground beef in a slow cooker and break it up into pieces.
    • Sprinkle with taco seasoning. Then, add the drained Rotel, diced onions, and minced garlic. Stir to coat the meat.
    • Cover and cook on low 5-6 hours or on high for 3-4.
    • Remove the cover and chop the taco meat into whatever size pieces you want.

    Notes

      This was great with the Rotel. I did add the liquid from the Rotel because an hour before done, I added a can of refried beans which needed the moisture. So tasty. I then put on Tostada shells with fresh grated cheese, fresh onion, a little picante sauce and shredded lettuce. It was so good and flavorful.
