I went to Duluth with my family a few weeks ago and was really looking forward to having this specific sandwich called a Lakewalk Special from a small cafe while we were there. The first evening, it was too late by the time we arrived. Then next day, we took a drive along the north shore of Lake Superior and weren’t back in Duluth at lunchtime. For dinner, we met friends at a restaurant, so I told my family that before we left the area on Sunday, I wanted to quickly stop and pick up a sandwich to take with me.
I got in line at the sandwich counter with about 3 people in front of me. The first couple placed their order and it was the same sandwich I wanted. Then, the person in front of me ordered the same sandwich too and before he completed his order, all three of them were told that the cafe was completely out of turkey. So, needless to say, I didn’t get my turkey sandwich and I was so disappointed.
I’ve been craving that sandwich ever since. What makes it so special? Well, it has made with thick slices of fresh bread, peppered turkey, cucumbers, tomatoes, lettuce and most importantly it has cranberry mayonnaise on it. So, I decided to make my own at home and it was outstanding. Today I am sharing this recipe because it is the perfect dish for our virtual baby shower for Megan from With Salt and Wit.

Cranberry Apple Cider Punch- Diethood
Start by making the cranberry mayo. Put mayonnaise and cranberry sauce in a bowl.
Whisk the two together until combined.
Now you are ready to make the sandwich, pile some peppered turkey breast on slices of fresh bread. I used a multi-grain bread from the bakery.
Next, add Swiss cheese, tomatoes and cucumbers.
Spread the cranberry mayo on another slice of bread and then put it on the sandwich.

Ingredients
- Peppered turkey breast slices
- Swiss cheese, sliced
- Tomatoes, sliced
- Cucumber, sliced
- Romaine lettuce, rinsed
- Multi-grain bread from bakery
- 1/2 cup mayonnaise
- 1/3 - 1/2 cup cranberry sauce
Instructions
- Mix together the mayonnaise and cranberry sauce starting with 1/3 cup of cranberry sauce and adding more if desired.
- Pile some peppered turkey breast on a slice of fresh bread.
- Next, add Swiss cheese, tomatoes and cucumbers.
- Spread the cranberry mayo on a second slice of bread and then put it on the sandwich.
