Mini Fruit Pizza

Last week I shared this mini fruit pizza picture with you and I thought that I should share the recipe with you too!  They are super easy to make, look adorable and taste delicious!  Plus you can make these mini fruit pizzas ahead of time which is always a bonus!
Cut fruit into small pieces.  I used kiwi, strawberries, blueberries and mandarin oranges.  Mix together cream cheese and whipped cream.
Spread the cream cheese/whipped cream mixture on shortbread cookies.

Top with some of the fruit.  I used 2 pieces of strawberry, 2 pieces of kiwi, 2 pieces of mandarin orange and topped them with 1 blueberry.
Then, I covered the mini fruit pizzas with plastic wrap and put them in the fridge.  They tasted great right was I was making them but after leaving them in the fridge overnight, they were even better!  The spread softened the shortbread and made it into a softer crust!

Mini Fruit Pizza

8 oz package of softened cream cheese
8 oz container of whipped cream
1 package of shortbread cookies
Strawberries
Blueberries
Kiwi
Mandarin oranges
Beat together the softened cream cheese and whipped cream.  Wash and cut up strawberries, kiwi and mandarin oranges.  Spread the cream cheese mixture onto the shortbread cookies and top with cut fruit.  Leave covered mini fruit pizzas in the refrigerator overnight for a softer crust.

  8. Fruit pizzas always bring back fond memories of our block parties when I was growing up! One of our neighbors use to make it and I thought they were so yummy. Good idea to use the shortbread cookies!
