Today I’m sharing a Tater Tot Breakfast Pizza recipe that has a tater tot crust topped with scrambled eggs, cheese, sausage, and bacon.

How To Make Tater Tot Breakfast Pizza
Step One
Line the bottom of a greased 12-inch cast iron skillet with tater tot crowns (flat, round tater tots sometimes called potato crowns) and then line the sides of the pan.
Bake the tater tots for 15 minutes.
Step Two
Heat the oil in a pan over medium heat.
Whisk together the eggs and a sprinkle of salt and pepper.
Cook the eggs until just set (they will cook more in the oven).
Step Three
Remove the tater tots from the oven and use a spatula to press down on top and sides of the crust to smash the tater tots a bit.
Step Four
Top with one cup of shredded cheddar cheese.
Step Five
Top with the scrambled eggs.
Step Six
Next, sprinkle with cooked, crumbled sausage.
Step Seven
Add another layer of shredded cheddar cheese.
Step Eight
Finally top the tater tot breakfast pizza with cooked, crumbled bacon.
Bake for an additional 10 minutes.

1. Can I use regular tater tots?
Yes, just smash them a bit more than the tater tot crowns to flatten them out.
2. Do the eggs have to be cooked beforehand or can they be poured over the tater tots and cooked in the oven? They can be baked all at once but the final dish will look different than this tater tot breakfast pizza. Pour the whisked eggs over the tater tots in the pan. Add the other toppings and bake at 425° for 25-30 minutes or until fully cooked.
3. How can I make this more hearty or more filling? Double or triple the scrambled eggs, sausage, and bacon.
4. What other toppings can I add to the tater tot breakfast pizza? Try adding mushrooms, tomatoes, peppers, onions, and spinach.

Tater Tot Breakfast Pizza
Tater Tot Breakfast Pizza recipe with crispy potatoes, scrambled eggs, melted cheese, crispy bacon, and sausage is a delicious breakfast or holiday brunch!
Ingredients
- 30 oz tater tot crowns
- 1/2 tablespoon vegetable oil
- 6 eggs
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups shredded cheddar cheese
- 3/4 cup cooked, crumbled bacon
- 3/4 cup cooked, crumbled sausage
Instructions
- Preheat oven to 425˚F.

Love this recipe. I added pepperoni, green onions and red pepper to make it look festive. It was fantastic! Theres so many things that can be done to this recipe. Could even make it a Mexican dish with taco meat as one if the layers. Great ideas! I even purchased a cast iron skillet just for this dish. I loved that too. Thanks so much.

Yes, you can make it the day before. The tater tots won’t be as crispy when reheated.

Not having bacon or sausage on hand I diced turkey pepperoni in place of the meat. Then when it was done in the oven I drizzled pizza sauce on top.

The tater tots should bake in 16-18 minutes as long as they are in a single layer in the pan. Once you add the toppings, you only need to bake it until the cheese is melted and the eggs are heated through. I’m guessing that 10 minutes will be enough just like in the single pan.

So I made this for the first time tonight and I sauté my peppers and onions then added my eggs to scramble it all together. I didn’t have bacon so I did a pound of breakfast sausage and it was delicious. I did add more time to my tater tots to add more crispy to them before I added my stuff on top. I also double my eggs and it was delicious!!! Thanks for sharing this!

We made this in our Dutch oven camping. It was awesome. We used diced ham, sausage crumbles and bacon bits. It cooked up beautifully at 350F for 20-25 minutes. We used the leftovers in breakfast burritos the next morning! Thanks for this awesome recipe!

Love this recipe! I premake this for our camping/ice fishing excursions. Make it to the point of putting back in the oven and freeze it, then bake it frozen 375 FOR 45 mins or so.

I made this today. I had regular tator tots so I partially cooked them then cut in half the long way. Easy to make and I think you could make this with veggies like tomato onion pepper and TVP crumbles if you don’t eat meat. Or change it up with spinach and crumbled feta and sun dried tomatoes on top. Lots of options with this recipe.

Love this pizza, so creative! To satisfy our desire for a spicy flavor I spread a layer of Philly Spicy Jalapeno Cream Cheese on the tator tots before adding the other toppings. Also cooked up scallions and mushrooms in the sausage! This was even better than any breakfast casserole we’ve ever made! Very moist, yet stable when served and lots of great flavor!
