We are a breakfast loving family but oftentimes no one feel like preparing a meal right after getting up. This Egg Bake is fabulous because it can be prepare the night before and baked in the morning. Or it can be fully baked and then reheated as needed.

Cut the crusts off of the bread and cut or tear it into small pieces.

Spread the bread pieces in a greased casserole dish. Use a 9×13 for thinner pieces or an 11×7″ for thicker pieces.

Beat the eggs, milk, salt, and pepper together.

Pour over the bread pieces in the dish.

Sprinkle with cooked, crumbled bacon.

What kinds of meat can I put on an egg bake?

My family’s favorite breakfast meat is bacon (especially my oven cooked bacon) so that is what I used to make this egg bake. But it is also delicious with breakfast sausage or diced ham. Other options include using chorizo, turkey sausage, or chicken sausage.

Then top the egg bake with shredded cheddar cheese.

Can I substitute the cheddar cheese with another variety?

Yes, you can swap out the shredded cheddar cheese for your favorite cheese or a combination of cheeses. This egg bake would be great with Monterey Jack or Swiss cheese. Or for extra flavor using pepper jack cheese!

Bake the breakfast casserole at 375˚F for 45-50 minutes, until a knife inserted in the center comes out clean.

What else can I add to my egg bake?

This recipe is for a basic egg bake with the eggs, cheese, and bacon but there are so many ingredients you can add to make it your own! As mentioned above, you can swap out the meat or the cheese for different flavors. You can also add mushrooms, onions, diced peppers, roasted vegetables, or hash browns.

How do I prepare egg bake ahead of time?

One of the things I love about making an egg bake is that you can prepare it ahead of time. After adding the bacon and shredded cheddar cheese, cover the casserole dish and place in the refrigerator overnight. Remove it from the refrigerator 30 minutes before baking as directed.

Can you freeze egg bake?

Yes, you can freeze egg bake. There are a couple of ways of doing it. One is freezing it before baking and the other is for freezing it after baking.

The first way is to freeze the uncooked egg bake. Allow it to thaw in the refrigerator overnight and then remove it from the fridge 30 minutes before baking as directed.

The second way is to freeze the cooked egg bake. Allow the casserole to cool completely, cut it into pieces, and wrap each piece with plastic wrap. Put the wrapped slices in a freezer bag. Remove as many slices as needed and allow them to thaw in the fridge overnight. Then, reheat them in the microwave in the morning.

Ingredients

  • 4 slices white bread
  • 12 eggs
  • 2 cups whole milk
  • 1/2 tsp salt
  • 1/2 tsp coarse ground black pepper
  • 1 lb bacon, cooked and crumbled
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 375˚F.
  2. Cut the crust off of the bread and then cut or tear it into small pieces. Spread in a greased 9x13 casserole dish for thinner pieces or an 11x7 for thicker pieces.
  3. Beat the eggs, milk, salt, and pepper. Pour over the bread pieces.
