    Breakfast Pizza with Hash Brown Crust

    This breakfast pizza with a hash brown crust can be made for breakfast or as an easy dinner. It is topped with bacon, ham, and cheese.

    My kids loved having a delicious, warm, cheesy breakfast! I love how easy it was to make. It was such a big hit that I will make it for dinner one night when everyone is home to enjoy it. Also, with the holidays just around the corner, this would be a great meal to serve overnight guests!

    Tonia’s Notes

    Growing up, one of our favorite things to have for dinner was breakfast! We loved anything from pancakes to waffles and French toast to fried eggs. French toast was my dad’s specialty, and it was what he would make us on those rare occasions when my mom wasn’t home to make dinner.

    My husband and kids love breakfast any time of the day. Our favorites include omelets, egg bakes, pancakes, and breakfast sandwiches. And, of course, everyone’s favorite side dishes are breakfast potatoes and bacon!

    This recipe starts with Simply Potatoes Shredded Hash Browns. Simply Potatoes are my go-to potatoes for family breakfast solutions.

    I also use them in casseroles and when I make soups like my slow cooker chicken pot pie soup. I love the convenience! There’s nothing to peel or shred, and I save on dishes.

    How To Make

    Step one button.

    Make Crust

    Spread the shredded hash browns out on a stoneware pizza pan and press into a pizza crust shape. Drizzle with two tablespoons of melted butter. Sprinkle with salt and pepper. Bake at 425˚F for 20-25 minutes.

    Toppings

    While the crust is baking, fry eight slices of bacon and cook three scrambled eggs. Remove the crust from the oven and sprinkle with the scrambled eggs. Next, crumble the bacon and sprinkle it over the eggs. Follow the bacon with the diced ham and any other toppings your family loves, such as onions, peppers, or mushrooms.

    Bake

    Finally, top it all with shredded cheese. Return the breakfast pizza to the oven and bake for an additional 20-25 minutes.

    Storage Tips

    • Make Ahead: You can prepare the pizza ahead of time, store it in the fridge, and then do the final baking before you eat it.
    • Refrigerator: Store the leftovers in an airtight container in the fridge for 3-4 days.
    • Freezer: You can freeze the leftovers in an airtight container for 1-2 months.

    Ingredients

    • 20 oz shredded hash browns
    • 2 tablespoon butter melted

    • ½ teaspoon salt
    • ¼ teaspoon black pepper

    Instructions

      So here it is, Thanksgiving morning- I’m making food for later but made this to tide us over- so easy and delicious! I can’t stand when people review a recipe and give all the changes they made- but guess what 🤦‍♀️- here I go. To start with I had 2 16 Oz bags of hash browns. Yep- used both. Thawed them and pressed moisture out. Pressed them down on a 16” pizza stone. Baked according to recipe. Then I scrambled 5 eggs- maybe not quite all the way- and put them on crust. I didn’t have bacon so I cooked about 7 link sausages, cut them up and spread on pizza. Topped with a leftover Mexican shredded cheese blend on one side and slices of Pepper Jack on the other. It’s all about using what I had. My family of 4 loved this! Highly recommend!

      Looks like a creative, yummy recipe! Before I try making it, was wondering if I have to use packaged hash browns, or can I use grated potatoes? Thanks!

      So I took this recipe to the extreme. I have a tendency of doing that. After cooking the hash browns for first 25 minutes I added one clove of diced garlic, 7 slices of mozzarella cheese to top of hash browns (very cheesy base). I used 9 eggs (scrambled in bacon grease) and put on top of mozzarella and hash browns Put bacon, Italian sausage, diced onion, fresh bell pepper and tomato from the garden and sliced mushrooms. Added diced mozzarella (had one slice left over) and cheddar cheese. Cooked it for the additional 25 minutes. Family loved it. Thank you for the idea. If it wasn’t for the idea of making this I would have not done this.

      I’m curious why if the eggs and near are all precooked, why it would need to be cooked so long the second time? Send to me you would have tough overcooked eggs if you did that.

      I really want to give this a try, but think I’ll make a few tweaks based on the replies! I bet green chili sauce would be awesome on it too!

      I tried this and thought the crust was too thin. You really couldn’t taste any of the hash browns. If it has worked for you can you tell me the size of hash browns you used and size of your stone? I read the comments and it said 3 1/2 cups of hash browns which I used (16 oz). Just wondering if I increase the amount of hash browns if they will cook thru.

        Hi Emily,
        That’s a tough one! I also struggle with how much food to make. I would cut this into 8 pieces. One piece is enough for me but my teenagers and husband would probably eat 2 pieces each. So, if I were making just this for breakfast for 18 adults, I would make 4 of these. If there are lots of kids, you can cut back on that. Also, if you are serving additional items like fruit, toast, cinnamon rolls or yogurt, guests might only eat one piece of this breakfast pizza along with other items.

      This is so good! I have made this at least a dozen times. I make this on a cookie sheet and I do not pre-cook the eggs. I only cook it a second time for 15 min. Maybe because I use a cookie sheet and it makes the dish thinner it doesn’t need to cook as long.

        My Grandson loves smoked sausage do I sliced the sausage thin and used the sausage with Hatch Green Chili in it (I’ve also used the Jalapeño one which adds a great kick.) The round sausages look like Pepperoni. I put it on top of the pizza. It was delicious!

      Sounds wonderful! Silly question, but I assume when you say “scramble the eggs” you mean to scramble them & cook them also? I only ask because my recipe uses raw, scrambled eggs, but hash browns on top, so getting soggy would not be an issue. Thanks for your time!

        It is great this way….I used Canadian Bacon (pizza size) and have sometimes added onion or blanched asparagus (if we are eating it for supper).
