    Sweet and Spicy Sriracha Bacon Chicken Bites

    This is the time of the year when everyone is looking for appetizer recipes for holiday parties. These Sweet and Spicy Sriracha Bacon Chicken Bites are delicious and easy to make. This post is sponsored by Gold’n Plump. All opinions are 100% mine.

    Sweet and Spicy Sriracha Bacon Chicken Bites

    Have you jumped on the Sriracha bandwagon yet? I was a little late joining this craze. I didn’t even realize that this hot chili sauce was quickly making its way into everything from candy to potato chips until Christine told me about it.

    I wanted to try cooking with Sriracha and decided to make an appetizer that is perfect for holiday parties. I made these Sweet and Spicy SrirachaBacon Chicken Bites using Gold’n Plump® chicken and my family loved them!

    Gold'n Plump Chicken Breast Fillets

    While at the grocery store buying chicken, I noticed this package of individually wrapped Gold’n Plump Boneless Skinless Chicken Breast Fillets. I love this idea because there are many times when only one or two of us want chicken for dinner. With this chicken on hand, I can easily grab the number of boneless skinless chicken breast fillets that I need. I also like that, as stated on the package, this chicken is hand-trimmed and gluten free with no added hormones and no preservatives.

    Sriracha Marinade Recipe

    The first step in making the Sweet and Spicy Sriracha Bacon Chicken Bites is to marinate the chicken. Whisk together canola oil, lime juice and Sriracha sauce and pour it into a gallon sized plastic bag.

    Cut the chicken into 1 inch cubes and add to the bag. Once all of the chicken pieces are in the bag, turn the bag to coat the chicken with the marinade and place in the fridge for about 1 hour, turning after half an hour.

    Chicken Appetizer Recipe

    Take 1 pound of bacon and cut each slice into three pieces. Wrap the bacon around the chicken pieces and secure with a wooden toothpick. Coat the bacon wrapped chicken in brown sugar. Place on a greased broiler rack and pan. Bake at 350 degrees for 30-35 minutes, rack in the middle position.

    Open the oven door slightly and broil for the bacon chicken bites until the bacon is crispy, turning the chicken every few minutes to prevent burning. I broiled these bacon chicken bites on high, rack in the middle position, for a total of 9 minutes and turned the chicken 3 times. Be sure to watch carefully because ovens vary and food can burn quickly while broiling.

    Bacon Wrapped Chicken Appetizer

    Leave the toothpicks in the Sweet and Spicy Sriracha Bacon Chicken Bites and place them on a tray to serve. I just bought this piece of slate on clearance and I love it. It is actually a cheese tray and you will be seeing it often in future photographs!

    Sriracha Bacon Chicken Bites

    My family was very impressed with this party food! They loved them just as they were but I thought this bacon-wrapped chicken appetizer didn’t have as much heat as I expected. Next time I make them, I am going to brush a little Sriracha on the outside of some of the bacon pieces before coating them with brown sugar.

    Ingredients

    • 2.25 pounds boneless, skinless chicken breasts
    • ½ cup vegetable oil
    • 2 tablespoons lime juice
    • 2 tablespoons Sriracha sauce
    • 1 pound bacon
    • 1 cup brown sugar

    Instructions

    • Whisk together vegetable oil, lime juice, and Sriracha sauce and pour into a gallon-sized plastic bag.
    • Cut the chicken into 1 inch cubes and add it to the bag. Once all of the chicken pieces are in the bag, turn the bag to coat the chicken with the marinade and place in the fridge for about 1 hour, turning after half an hour.
    • Preheat the oven to 350˚F. Take 1 pound of bacon and cut each slice into three pieces. Wrap the bacon around the chicken pieces and secure with a wooden toothpick.
    • Coat the bacon wrapped chicken in brown sugar and place on a greased broiler rack and pan. For extra heat, brush bacon with Sriracha before coating it with brown sugar.
    • Bake at 350˚F for 30-35 minutes. Then, open the oven door slightly and broil the bacon chicken bites until the bacon is crispy, turning the chicken every couple of minutes to prevent burning. Be sure to watch carefully because ovens vary, and food can burn quickly while broiling.

      Has anyone tried these in the airfryer? If so what temp/time? Have a Ninja Foodie Dual Basket airfryer if that helps.

      Mine were a little dry and needed more flavor. Seasoning? More sriracha in the marinade? Any suggestions on the chicken not drying out? Otherwise delicious. Did a trial run for next weekend 😉

      I made these tonight for a group of friends. These were very easy to make. I used 1 lb 5 oz of boneless chicken and had 40 appetizers. I let them marinade for 4 hours. I cooked them directly on a cookie sheet covered with tin foil. I cooked them for 30 min then broiled for 3 min, turned them, and broiled for 3 more minutes. They turned out just like the picture. They are definitely not spicy. Everyone loved them. Thanks Tonia for the easy to follow directions to this great recipe.

      I’m planning to make these next Saturday (8/20) for a party! (I tested these in a small batch, which is something else I love about this recipe! U can make as little or as much as u need!) But I need to know about how many pounds your chicken breasts are. I buy chicken in bulk, and these chicken breasts are HUGE! I’m assuming 4 of the ones I buy would be WAY MORE than the prepackaged ones. THANKS!

      How critical is it to have used a broiler rack? I didn’t read thoroughly and they’re just on a baking tray…in my oven…right now…

      Made the chicken bites for a Christmas Eve get together and they got gobbled up with rave reviews from all.. Added some soya sauce to the mix and let the chicken marinade for a few hours. will definitely make again!
