The ultimate appetizer for a family gathering or party is Veggie Pizza Bites! Vegetable pizza is a classic appetizer that often shows up at parties and family gatherings. There are so many variations and I love everyone.
A veggie pizza that is eaten as an appetizer is served cold. The crust varies from puff pastry to crescent rolls. The “sauce” on a veggie pizza is cool and creamy.
The toppings include chopped veggies and anything from olives to cheese. Today I’m sharing another fun way to enjoy veggie pizza. These Veggie Pizza Bites are easy to make and everyone loved eating them!
This recipe features the new Hidden Valley® Roasted Garlic Ranch. The ranch dressing is what gives these pizza bites a delicious flavor and no other seasonings are needed!
Veggie Pizza Bites Recipe
Step One:
Beat one package of softened cream cheese until smooth.
Step Two:
Add the shredded cheddar cheese and ranch dressing to the bowl.
Step Three:
Mix until well combined.
Step Four:
Scoop small spoonfuls of the cheese mixture and roll it into small balls. I was about to make 36 mini cheese balls.
Place the garlic ranch cheese balls in the freezer for 10-15 minutes to harden.
Step Six:
While waiting for the cheese balls to harden, finely chop the vegetables for the veggie pizza bites.
I used broccoli, carrots, red and yellow peppers. I chopped enough so that I had about 1/2 cup of each.
The peppers had a lot of liquid, so I pressed on the chopped peppers with a paper towel to soak some of it up.
Step Seven:
Remove the cheese balls from the freezer and coat them with the chopped vegetables, gently pressing the veggies into the cheese.
I coated some of the cheese balls with just one veggie and others I coated with a mixture of the veggies so there is a variety of colors in the veggie pizza bites.
Step Eight:
For the pizza part of the veggie pizza bites, place the veggie cheese balls in small triangular crackers or pita chips before serving.
Everyone I shared these veggie pizza bites with loved them!
Some of the kids wanted to just eat the veggie cheese balls and skip the cracker. They could be served that way or you could insert a pretzel stick into each cheese ball before serving.

- 1/2 cup finely chopped carrots

- 1/2 cup finely chopped yellow peppers
