Two Ingredient Dough Pretzel Bites are SUPER EASY to make with no yeast and no waiting for the dough to rise. Just mix the dough, cut nuggets, dip in baking soda water and bake!
With the kids going back to school comes the question of what do I give them for an after school snack. One of my kid’s favorite snacks is pretzel bites and this recipe for two ingredient dough pretzel bites is SUPER easy to make.
How To Make Two Ingredient Dough Pretzel Bites
Put self-rising flour and plain, fat-free Greek yogurt in the bowl of a stand mixer with the dough hook attachment.
Mix at a low speed until combined.
Then, knead at a medium speed for about 3 minutes until a ball forms.
Turn the dough out onto a floured surface.
Sprinkle the top with flour, knead a couple of times, and form the dough into a ball.
Cut the dough ball into four wedges.
Roll each piece of dough into a long rope and cut the ropes into small segments.
Dissolve baking soda in boiling water. Then, Dip the dough segments into the baking soda mixture.
Place coated pretzel bites on a parchment-covered baking sheet.
Bake at 425˚F for 7-10 minutes, until golden brown.
Brush pretzel bites with melted butter.
Sprinkle with pretzel salt.
Recipe Tips
1) I can’t find self-rising flour. Can I make myself? For one cup of self-rising flour, whisk together one cup of all-purpose flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt, but remember that results may vary!
2) What brand of plain, nonfat Greek yogurt do you recommend? I always use Chobani or Fage. You can use whatever kind is available at your local grocery store, but some brands are more watery, so you’ll need to adjust accordingly.
3) Do I have to use plain, fat-free, Greek yogurt for this recipe? No, but your results may vary. You can try using fat-free, full fat, 2% or 5%, but you may need to add a different amount of flour or make changes in the baking time.
4) What should I do if my dough is too sticky? Knead in a little more flour at a time until it is workable.
5) Can I make these pretzel bites without a stand mixer? Yes! Stir the self-rising flour and Greek yogurt together until combined. Turn it out onto a floured surface and knead until smooth.
6) How can I make these two ingredient dough pretzel nuggets WITHOUT a dough hook? Use the paddle attachment on your mixer to combine the self-rising flour and Greek yogurt. Turn it out onto a floured surface and knead until smooth.
7) What can I use INSTEAD of pretzel salt? You can use another coarse salt like kosher or sea salt.
8) What other seasonings/toppings would you suggest? Try everything seasoning, garlic, parmesan, ranch or cinnamon sugar.

Omgosh so easy and so yummy! I had to make my own self rising flour. I literally added bread flour then the baking powder and salt into the mixing bowl and i doubled it. so then i put 2 cups of greek low fat yogurt and followed the instructions the rest of the way. omgggg they turned out so yummy! We will for sure be incorporating this recipe into our weekly homemade snacks!

Great recipe! I added an additional 1/4 tsp of baking soda straight into my dough to really amplify the pretzel flavor. Once baked, I sprayed half with avocado oil, tossed in cinnamon sugar and left the other half plain and dipped in honey mustard and they were delicious!

I have one question…WHY??!! Why must they taste SOOO good?! This recipe is so easy. Even having to make some self-rising flour since I was out and kneaded by hand. Great Value Greek yogurt worked perfect. I blanched mine in simmering baking soda bath for 5 long seconds with slotted spoon so I could do a handful at once. The first bite was better than ANY fresh pretzel place I’ve ever had. An entire baking sheet empty in 5 min with husband and 3 teens. Then made for breakfast next morning. Half pretzel salt and half cinnamon sugar both times. These will become a staple for any movie/game night or company over.

This is most excellent! Not only is this one of the fastest homemade dough recipes I’ve encountered it is also fast and easy to cleanup afterwards.
I made the logs a little more thin and longer then twisted them into pretzels. These are better than any I’ve had before (I’ll be 54 yrs young soon).
As for the preparation, I prefer the dough to turn out sticky so I can meter more flour into the dough while working it on the prep surface adding a little at a time until I reach the expected perfection.
I can’t wait to try all of the different uses for this recipe published here.

Hello! I tried this recipe and was super excited about it. I don’t often work with bread dough, so I am trying to figure out what I am doing wrong in the kneading process. My dough turns into a ball within about a minute of kneading in the kitchenaid (level 2-3), but then would fall apart if I kneaded longer. When I took it out “early” when it was a ball, it was so impossible to work with as it was extremely sticky and could not be rolled out into logs. Any recommendations?

It sounds like you need to add more flour. I would take the dough out when a ball forms and place it on a well floured surface with additional flour on top. Then, gently knead the flour into the dough a few times. Then, sprinkle more flour on the surface and on the top of the dough. This dough doesn’t act the same as a dough made with yeast and it is sticky like biscuit dough is. Basically you need to bottom and top of the dough to be coated with enough flour to make it workable, if that makes sense.
If you aren’t worried about the pretzel bites being the same size, an alternative to rolling the dough into logs, is to use kitchen shears to cut small pieces of dough from the ball.

Amazing pretzel bites. They taste authentic and I love that they are just bites. Also I froze some and then reheated them in the toaster oven, when they came out I brushed them with butter and sprinkled with salt. Just as delicious!

Good morning major pretzel bites and they are excellent but I think you should change the title it is not two ingredients it’s very misleading butter is an ingredient, self-rising flour is an ingredient salt is an ingredient and yogurt is an ingredient so it’s technically four. Just to clarify for people who are new Bakers and a recipe that calls for only two ingredients

I’m sorry to hear that you are frustrated! The dough is made with two ingredients that is why I call it two ingredient dough. Once you’ve made the dough you can use it as a pizza crust, make focaccia bread, or breadsticks. For this recipe, you can bake the pretzel bites without adding more ingredients but they are going to taste like little biscuits instead of pretzels without the baking soda mixture and salt on top.

I was excited to make these, especially since they looked easy. They came together nicely and looked great, but do not taste like pretzel to me or my boys. Not sure what creates that pretzel taste, all I taste is tang from the yogurt and baking soda.
