60 Second Brownie For One

Do you have a certain time of the day when, as a mom, you just need a little pick me up?  For me that time comes in the afternoon.  I like to take a little break and have some time for myself where I accomplish nothing.  It doesn’t need to be a long time…often it is only 10 minutes but it helps me recharge!  I love to have a little snack and browse through some of my magazines.

One of my go-to treats that I’ve been making for years is a 60 Second Brownie For One.

Here is what I used to make the brownie:
Packaged Brownie Mix (I used sugar free but any will work)
Water, Non-stick spray, Tablespoon
Small Microwavable Container (a coffee cup works too)
I sprayed the container with non-stick cooking spray, added 2 tablespoons of brownie mix, poured in 1 tablespoon of water and mixed it with a fork.  Then, I put it in the microwave for 60 seconds and have a delicious, warm brownie…for one!!

I like to top my brownies with a little whipped cream and a few mini chocolate chips.

I like to spend my small breaks outside. So I brought my iced coffee and brownie outside with me. Since no one was home to take a picture of me, I set my camera on self-timer, ran to my chair, plopped down, grabbed my iced coffee and the camera snapped!

Ingredients
  • 2 tbsp sugar-free brownie mix
  • 1 tbsp water
  • 1 tbsp whipped cream
  • 1 tsp mini chocolate chips
Instructions
  1. Put 2 tablespoons of brownie mix in a greased microwave safe mug.
  2. Add 1 tablespoon of water and mix it with a fork until smooth.
  3. Microwave for 60 seconds.
  4. Top with whipped cream and mini chocolate chips.
