This 60 Second Brownie is the fastest way to get a warm, delicious brownie for dessert or an afternoon pick-me-up. It only requires a few ingredients!

Chocolate Mug Brownie with whipped cream

Do you have a certain time of the day when, as a mom, you just need a little pick me up?  For me that time comes in the afternoon.  I like to take a little break and have some time for myself where I accomplish nothing.

It doesn’t need to be a long time…often it is only 10 minutes but it helps me recharge!  I love to have a little snack and browse through some of my magazines.

One of my go-to treats that I’ve been making for years is a 60 Second Brownie For One.

    microwave brownie ingredients

Here is what I used to make the brownie:
Packaged Brownie Mix (I used sugar free but any will work)
    Water, Non-stick spray, Tablespoon
Small Microwavable Container (a coffee cup works too)

preparing the brownie in a mug

I sprayed the container with non-stick cooking spray, added 2 tablespoons of brownie mix, poured in 1 tablespoon of water and mixed it with a fork.  Then, I put it in the microwave for 60 seconds and have a delicious, warm brownie…for one!

brownie in a bowl with whipped cream

    forkful of brownie

I like to top my brownies with a little whipped cream and a few mini chocolate chips.

What do you do for an afternoon pick me up?

A chocolate mug brownie in a cup with whipped cream and chocolate chips.

        Hi Crystal,
You can use regular brownie mix! It doesn’t have to be sugar-free.

Great. TIP: if you are using a cheaper brand of brownie mix, try adding some instant coffee granules OR cocoa powder to this recipe to make it more chocolatey.

This was a delicious treat! I added just a few chopped walnuts, a couple of chocolate chips, a little oil, and doubled the recipe on my second try…delish.
