    60 Second Brownie For One

    This 60 Second Brownie is the fastest way to get a warm, delicious brownie for dessert or an afternoon pick-me-up. It only requires a few ingredients!

    Do you have a certain time of the day when, as a mom, you just need a little pick me up?  For me that time comes in the afternoon.  I like to take a little break and have some time for myself where I accomplish nothing. 

    It doesn’t need to be a long time…often it is only 10 minutes but it helps me recharge!  I love to have a little snack and browse through some of my magazines.

    One of my go-to treats that I’ve been making for years is a 60 Second Brownie For One.

    Here is what I used to make the brownie:
    Packaged Brownie Mix (I used sugar free but any will work)
    Water, Non-stick spray, Tablespoon
    Small Microwavable Container (a coffee cup works too)

    I sprayed the container with non-stick cooking spray, added 2 tablespoons of brownie mix, poured in 1 tablespoon of water and mixed it with a fork.  Then, I put it in the microwave for 60 seconds and have a delicious, warm brownie…for one!

    I like to top my brownies with a little whipped cream and a few mini chocolate chips.

    Ingredients

    • 2 tablespoon brownie mix (sugar-free or regular)
    • 1 tablespoon water
    • 1 tablespoon whipped cream
    • 1 teaspoon mini chocolate chips

    Instructions

    • Put 2 tablespoons of brownie mix in a greased microwave safe mug.
    • Add 1 tablespoon of water and mix it with a fork until smooth.
    • Microwave for 60 seconds.
    • Top with whipped cream and mini chocolate chips.

      Thank you for this recipe. With my microwave, a minute is too longs. A 40 seconds run gives me a little delicious little brownie cake. I like to spread Polaner’s all-fruit apricot or blackberry jam on the top of the warm brownie. Wonderful.

      Is there a way to tell when the brownie is done? When I make the Betty Crocker “Mug Treats” they say the brownie is done when the top is dry. I’m hoping that’s the same thing with this recipe because I definitely want to double it. I would appreciate any help!

        Hi Tawni,
        Yes, I usually look for top of the brownie to look “baked” which would also make the top look “dry”. And the edges of the brownie start to pull away from the mug or ramekin. I would suggest testing it out in your microwave to how long it takes. Even the “not-so-perfect” brownies taste fantastic!

      I tried this and it turned out just fine. It was a little dry and I added some pecans so maybe that’s why. Anyway perfect for one person and a quick tasty treat.

      Utterly failed – didn’t cook in 60 seconds or even 3 minutes. I used Ghirardelli brownie mix fyi.

        I’m sorry to hear that! I’ve only made it with Pillsbury Brownie Mix or Betty Crock Brownie Mix. But from looking at the boxes, it appears that the Ghiradelli mix calls for a similar amount of ingredients. So it should give similar results. I’ll have to buy a box and test it. The other variables are microwaves (some are more powerful) and cooking containers (some heat up more than others). In the meantime, if you want to try it again, I would suggest adding less water and see if that works.
