Tonia’s Notes
We’ve been making this Greek chicken marinade for years, and I am finally getting around to sharing the recipe here! This marinade is a favorite of ours because it’s easy to make, flavorful, and we can use the chicken in so many ways.
I always make more chicken than what my family will eat for the main meal so that we can have leftovers for lunch. It is just as good on salads and in wraps as it is fresh off the grill! When it’s too cold outside to use the grill here in Minnesota, I make the chicken in my air fryer, bake it in the oven, or cook it in a skillet.
Although the seasoned butter at the end is an extra step, it’s one of my favorite tricks for adding more flavor while keeping the chicken juicy.

How To Make Greek Chicken Marinade

Marinade Ingredients
To prepare the marinade, whisk together the vegetable oil, freshly squeezed lemon juice, vinegar, honey, and Greek seasoning.
You can add more Greek seasoning if you want, but do so with caution since the main ingredient in the mixture is often salt, and you don’t want the chicken to be too salty.

Marinate Chicken
Flatten the chicken breasts to an even thickness and then place them in a gallon-sized storage bag. Pour the Greek chicken marinade over the chicken, seal the bag, and turn to coat. Place in the fridge to marinate for 30-60 minutes.
Since this marinade contains freshly squeezed lemon juice and vinegar, avoid marinating the chicken for longer than two hours. The acids can change the texture of the chicken if it is marinated for too long.

Grilled Greek Chicken
Preheat the grill to medium heat. Grease the grill grates before adding the chicken. Discard the remaining marinade. Cook the chicken for 12-16 minutes, turning it over halfway through cooking, or until it reaches an internal temperature of 165˚F.

Seasoned Butter Finish
Whisk together melted butter, two teaspoons of freshly squeezed lemon juice, and one teaspoon of Greek seasoning. Then, brush it over the cooked chicken.

Ways To Serve Greek Grilled Chicken
- Make kabobs with mini bell peppers, cherry tomatoes, lemon wedges, and onion wedges. Grill the veggie kabobs and serve them alongside the Greek grilled chicken.
- Use it in Greek chicken wraps made with flatbread. Fill the wraps with lettuce, rice, sliced chicken, diced tomatoes, and diced cucumbers, then top with cucumber dill sauce.
- Serve with creamy lemon orzo on the side, or dice the chicken and stir it into the orzo to make a casserole.
- Make a salad with lettuce, bell peppers, cucumbers, tomatoes, Kalamata olives, roasted artichokes, feta, and diced chicken. Top with cucumber dill sauce.

Recipe Tips
- Make Ahead: You can prepare this Greek chicken marinade in advance and store it in the fridge until you are ready to use it later in the day. Then add the chicken breasts 30-60 minutes before cooking them, and let them marinate.
- Leftovers: Store the leftover grilled chicken in an airtight container in the fridge for 3-4 days or in the freezer for 1-2 months.
- Reheat: Allow leftover frozen chicken to thaw in the fridge overnight. Reheat chicken in a skillet, microwave, or air fryer.
- Other Ways To Prepare: You can also bake the chicken in the oven, cook it on the stovetop, or make it in an air fryer.
