Should I add milk or water to scrambled eggs?
As with most things, there are many, many opinions about how to make scrambled eggs. We like adding milk to ours because it makes them soft, fluffy, and creamy. Others prefer using water or just making them plain.
We decided to do a little test and made 6 kinds of scrambled eggs changing up what we added while keeping everything else the same. The main differences we noticed are:
- Creaminess: The scrambled eggs made with heavy cream were the creamiest but the ones made with whole milk were still creamier than the ones made with water or only eggs.
- Texture: As far as texture goes, the one made with 1/4 cup of dairy were softer and moister.
- Taste: The less liquid added, the more they tasted like eggs.
- Appearance: The ones made with only eggs were slightly darker/more yellow and denser.
- Volume: The eggs with 1/4 cup of dairy added measured 1 1/4 cups in volume versus the other scrambled eggs which measured 1 cup in volume.
In the same way that we all like our coffee different, we all have our preferences when it comes to scrambled eggs. Here are some options that you can test out to see what your favorite method is:
- Less Milk: Reduce the amount of whole milk to 2 tablespoons.
- Half-n-Half: Use half-n-half instead of milk.
- Heavy Cream: Replace all or some of the milk with heavy cream.
- Water: Substitute the milk with 1-2 tablespoons of water.
- Plain Eggs: Don’t add any liquid. Just beat the eggs and pepper.
Start by cracking eggs into a bowl. Add milk and black pepper.
Beat the eggs and milk until foamy.
What other seasonings can I add?
This recipe only calls for black pepper and the salt comes from the butter. But you can definitely add more seasonings depending on what your family likes! Here are some popular choices:

Melt a tablespoon of salted butter in a skillet over medium heat.
Pour the beaten eggs into the pan and slowly stir the eggs by pulling them across the skillet with a silicone spatula.
As the eggs begin to cook they will form large, soft clumps (aka curds).
Turn the heat to low and gently fold the clumps of eggs over onto each other.
