    Tater Tot Breakfast Pizza

    This Tater Tot Breakfast Pizza recipe with crispy potatoes, scrambled eggs, melted cheese, crispy bacon, and sausage is a family favorite!

    Is it a tradition in your family to start the weekend and holidays with a hearty breakfast? It’s such a wonderful way to start the day.

    My family loves breakfast foods from French toast and pancakes to omelettes and baked oatmeal. This Tater Tot Breakfast Pizza is a combination of some of our favorites! It’s like all of your favorite breakfast foods in one slice!

    How To Make Tater Tot Breakfast Pizza

    Tater Tot Crust

    Pizza crust made from tater tots.

    Line the bottom of a greased 12-inch cast iron skillet with tater tot crowns (flat, round tater tots, sometimes called potato crowns) and then line the sides of the pan. Bake the tater tots for 15 minutes.

    Remove the tater tots from the oven and use a spatula to press down on the top and sides of the crust to smash the tater tots a bit.

    Shredded Cheese

    Top the crust with one cup of shredded cheddar cheese. The cheese will melt and help hold the crust together.

    Heat the oil in a pan over medium heat. Whisk together the eggs and a sprinkle of salt and pepper. Cook the eggs until just set. They will cook more in the oven.

    Spread the scrambled eggs over the tater tots in an even layer.

    Next, sprinkle with cooked, crumbled sausage. You could also use bacon bits or diced ham.

    Add another layer of shredded cheddar cheese. Or you could top it with some homemade cheese sauce!

    Finally, top the tater tot breakfast pizza with cooked bacon crumbles and bake for an additional 10 minutes.

    Make Ahead and Storage

    Make Ahead: To prepare the breakfast pizza ahead of time, assemble it up until the final baking. Allow the pan to cool, cover it, and place it in the fridge overnight. When ready to serve, remove from the fridge and bake at 425° for 25-30 minutes.

    Storage: Allow the leftovers to cool and then store them in an airtight container in the fridge for 3-4 days or in the freezer for up to four weeks.

    Can I use regular tater tots?

    Yes, just smash them a bit more than the tater tot crowns to flatten them out.

    2. Do the eggs have to be cooked beforehand, or can they be poured over the tater tots and cooked in the oven?

    They can be baked all at once, but the final dish will look different. To make it that way, pour the whisked eggs over the tater tots in the pan. Add the other toppings and bake at 425° for 25-30 minutes or until fully cooked.

    How can I make this more hearty?

    Double or triple the scrambled eggs, sausage, and bacon.

    Can I make it in a 9×13-inch pan?

    Yes, you can make it in a 9×13-inch pan or another casserole dish if you prefer.

    Ingredients

    • 30 oz tater tot crowns
    • ½ tablespoon vegetable oil
    • 6 eggs
    • ¼ teaspoon salt
    • ⅛ teaspoon pepper
    • 2 cups shredded cheddar cheese, divided
    • ¾ cup cooked, crumbled sausage crumbled sausage
    • ¾ cup cooked, crumbled bacon crumbled bacon

    Instructions

    • Preheat oven to 425˚F.
    • Line the bottom of a 12-inch greased cast iron skillet with tater tot crowns and then line the sides of the pan. Bake for 15 minutes.
    • While baking, heat the oil in a pan over medium heat. Whisk together the eggs and a sprinkle of salt and pepper. Cook the eggs until just set (they will cook more in the oven).
    • Remove the tater tots from the oven and use a spatula to press down on top and sides of the pizza to smash the tater tots a bit.
    • Top with one cup of shredded cheddar cheese.
    • Add the scrambled eggs, sausage crumbles and another cup of shredded cheese, making sure the cheese reaches the tater tots on the sides of the pans.
    • Sprinkle with the crumbled bacon and bake for an additional 10 minutes.

      Hey Tonia! This looks amazing! Wanted to try and make this for a family Christmas brunch, but we have a bunch of non-cheese eaters/ dairy-free family. Can you make this without the cheese?

        Hi Henrietta,
        The cheese helps hold the tater tots together to form the “pizza crust”. So, if I were making this without cheese, I would whisk the eggs, salt and pepper, and pour the mixture over the tater tots without cooking the eggs first. Top with the meat and bake. As the eggs cook along with the tater tots, they will help bind it all together. I’m not sure how long it will take to bake this way so you’ll have to check on it. It will be more like an egg casserole.

      Couple of questions–can this be easily doubled, tripled? We have a holiday brunch/open house coming up (about 60 people) and would like to serve this as one of the 2 breakfast casseroles. Instead of scrambling the eggs beforehand, can you layer the tots, meat and cheese and then pour the eggs over and bake? Finally, can this be cooked in advance and then frozen? Thanks! Danielle

        Sounds like a great idea! Yes, you can easily double or triple it and you can pour the eggs over the top. I would suggest whisking them with some milk first.         Yes, you should be able to. My only concern would be the grease running off the pan so I might line the oven rack with foil to protect my oven. Best of luck!

      Hi Tonia,
      I made this for dinner tonight for my husband and I, and it was AMAZING…What a great idea! Super easy and fun to make, and so yummy! We used ham instead and cooked it in with the eggs, and garnished at the end with some scallions. My husband is a food-snob, if you will, and he liked it so much he ate half of it himself! This is something I will definitely be making over and over again. This also would be the perfect breakfast dish for a crowd!
