My husband and I LOVED this!! I used hashbrown squares in a square pan and it returned out great. Also put browned onions with the eggs then hit it with the broiler after baking to brown the cheese a little.Next time I make this I am going to make up two and freeze one for those mornings with little time. Thanks for sharing this recipe
Tonia says
Yayyy!! I love hearing that. Yes, I’ve cut it into portions and stuck them in the freezer for my husband to warm up in the morning. Thanks for letting me know! ~Tonia

I made this just a few minutes ago and couldn’t wait for it to come out of the oven. I did however, change up the recipe. I didn’t have cheddar cheese and I didn’t have the tator rounds. I used regular tater tots with onions and just mashed them down really good, after that I place 4 slices of provolone cheese then put the eggs, sausage on it then I put mexican style queso quesadilla cheese and then put the bacon on top. OH MY WORD…..let’s just say I’ll be making this one again!!! Love love love it!

Do you think it would turn out if I made it in a 9×13 glass dish?

Yes, I think it would be wonderful like that! Enjoy! ~Tonia

Hey Tonia! This looks amazing! Wanted to try and make this for a family Christmas brunch, but we have a bunch of non-cheese eaters/ dairy-free family. Can you make this without the cheese?
Tonia says
Hi Henrietta,
The cheese helps hold the tater tots together to form the “pizza crust”. So, if I were making this without cheese, I would whisk the eggs, salt and pepper, and pour the mixture over the tater tots without cooking the eggs first. Top with the meat and bake. As the eggs cook along with the tater tots, they will help bind it all together. I’m not sure how long it will take to bake this way so you’ll have to check on it. It will be more like an egg casserole.
Merry Christmas!
~Tonia

Couple of questions–can this be easily doubled, tripled? We have a holiday brunch/open house coming up (about 60 people) and would like to serve this as one of the 2 breakfast casseroles. Instead of scrambling the eggs beforehand, can you layer the tots, meat and cheese and then pour the eggs over and bake? Finally, can this be cooked in advance and then frozen? Thanks! Danielle
Tonia says
Sounds like a great idea! Yes, you can easily double or triple it and you can pour the eggs over the top. I would suggest whisking them with some milk first. I found this tater tot breakfast casserole for you to check out for more tips: http://www.chewoutloud.com/2015/01/27/cheesy-tater-tot-breakfast-bake/
Donna says
Can you use a pizza pan for this?
Tonia says
Yes, you should be able to. My only concern would be the grease running off the pan so I might line the oven rack with foil to protect my oven. Best of luck!
Nan says
This breakfast was a big hit with our campground group. They said it was a “keeper”. It was easy and delicious!
Jennifer Esqueda says
Nan – in the campgrounds – how did you ensure it would cook well? Did you cover your iron skillet?
Todd B. says
Best breakfast ever!!! This recipe is awesome and easy.
Linde says
Looks great! Do you thaw the tots out before hand? I think I’ll also try the ham that some other reviewers mentioned. Frankly, I don’t think you can go wrong with this recipe. Thank you for sharing it!
Tonia says
Thanks! No, they were still frozen. Enjoy! ~Tonia

Hi Tonia,
I made this for dinner tonight for my husband and I, and it was AMAZING…What a great idea! Super easy and fun to make, and so yummy! We used ham instead and cooked it in with the eggs, and garnished at the end with some scallions. My husband is a food-snob, if you will, and he liked it so much he ate half of it himself! This is something I will definitely be making over and over again. This also would be the perfect breakfast dish for a crowd!
Tonia says
That’s so awesome! My husband loves it too. I will have to try making it with ham. Thanks!

Breakfast pizza. Love the idea! I will try this next Sunday xx
