What do you eat for lunch on a daily basis? I love having gourmet sandwiches but eating out can get expensive! I created a delicious yet inexpensive gourmet sandwich that can easily be assembled in the morning to take to work or put in fridge for an ready-to-eat lunch for a mom who works at home.
I even like to pack myself a sandwich when I am running errands because making it myself saves money and it usually healthier than what I would buy. I love spicy sandwiches so I made a Southwestern BLT!
To make the sandwich I used Castle Wood Four Pepper Turkey Breast, Castle Wood Pepper Jack Cheese, Ciabatta Rolls, Romaine Lettuce, Bacon, Chipotle Mayo, Tomato and an Avocado
I found the Castle Wood Four Pepper Turkey and other ingredients at Sam’s Club. The turkey was ready to go so I just opened the package and immediately Vanessa asked for a slice. Then, she asked that I make her a sandwich as well!
I warmed the bacon in the microwave for 30 seconds. We love the ready cooked bacon because it is so easy to make with minimal mess!
I broke a couple Romaine leaves off, rinse and dried them.
I gave the tomato a quick rinse a cut a couple of slices.
I mixed the avocado with a guacamole mix I had in my pantry. Cut the ciabatta roll in half and spread guacamole on one side and chipotle mayo on the other.
Top with Romain lettuce, tomato slices and crispy bacon.
Then, layer on the four pepper turkey.
Add a slice of pepper jack cheese on top of the turkey.
Put the top of the roll on and the Southwestern BLT is ready to enjoy! Or wrap the sandwich tightly in plastic wrap and keep cool until ready to eat. The Southwestern BLT is spicy so if you like things more mild, substitute some of the ingredients for others such as using cheddar cheese instead of pepper jack.

Ingredients
- 1 ciabatta roll
- 1 tbsp chipotle mayo
- 1 tbsp guacamole
- 2 slices peppered turkey
- 1 slice pepper jack cheese
- 2 slices cooked bacon
- 2 slices tomato
- romaine lettuce
Instructions
- Cut the roll in half.
- Spread mayo on one half and guacamole on the other half.
- Layer with the remaining ingredients.

Yum, Looks so good!!! I think that packing a sandwich is a good idea when you are running errands. Yesterday a quick stop at the Target food court put me back $11.50. It still bugs me.. Great idea, beautiful photos.
