    Tonia’s Notes

One of the quick meals my mom used to make for us was stir fry. She started with sliced veggies, added cooked chicken, and finished with a sauce. It always turned out so good, and I’ve loved it ever since.

This vegetable stir fry is easy to make. If you are short on time, check the produce department at your grocery store for pre-sliced peppers, bags of cauliflower and broccoli florets, and sliced carrots. I typically use my homemade teriyaki sauce, but you can use bottled sauce as well.

    Recipe Tips

    • Prep Ahead of Time: If you buy whole veggies instead of pre-sliced ones, you can cut the vegetables ahead of time and store them in a container in the fridge. You can also make your teriyaki sauce ahead of time so that it is ready to go.
    • Fresh Vegetables: This recipe is very versatile! You can use whatever vegetables you have on hand. We used broccoli, cauliflower, sugar snap peas, bell peppers, and carrots. Other options include onions, bean sprouts, green beans, snow peas, baby corn, water chestnuts, and summer squash.
    • Sauce Options: We used teriyaki sauce, but you can also use peanut sauce, stir fry sauce, or orange sauce.
    • Leftovers: Although stir-fried vegetables are best when enjoyed right after making them, you can refrigerate the leftovers and reheat them in a skillet, air fryer, or microwave.
